For the beef patties
450g ground beef (80/20 fat ratio)
Salt & black pepper
1 tbsp butter (optional for flavor)
For the cheese sauce (the dripping one)
200g cheddar cheese (grated)
2 slices American cheese
1 tbsp butter
1/2 cup heavy cream
1 tsp paprika
1/2 tsp garlic powder
Pinch of salt
Other ingredients
1 brioche burger bun (buttered & toasted)
Ketchup or burger sauce (optional)
👨🍳 How to Make It
- Prepare the Cheese Sauce (the secret for the dripping effect)
- In a pan on low heat, melt the butter.
- Add heavy cream and warm it.
- Add grated cheddar + American cheese slices.
- Stir until fully melted and thick.
- Add paprika, garlic powder, and a pinch of salt.
- Keep it warm and runny — this is what creates the “lava cheese” look.
- Make the Smash Patties
- Roll the beef into 3 equal balls (150g each).
- Heat a cast iron pan until very hot.
- Place a ball of beef and immediately smash it flat using a spatula or burger press.
- Season with salt and pepper.
- Cook 1–2 minutes until edges are crispy.
- Flip and cook 1 minute.
- Add a spoon of cheese sauce on top to melt into the meat.
- Repeat for all 3 patties.
- Fry the Bun
Brush the brioche bun with butter.
Toast it until golden brown.
- Assemble the Monster
- Bottom bun
- Smash patty + cheese sauce
- Second patty + more cheese
- Third patty + extra cheese
- Drizzle the remaining cheese sauce all over
- Add ketchup if you want
- Top bun
🤤 Tips for the Exact Look
Use lots of cheese sauce to get the overflow effect like in the photo.
Let some cheese drip intentionally when stacking.
Smash patties thin so they get crispy but stay juicy.
